When cleaned, freshen them in at least a gallon of cold water over night. In the morning pour oif the water, drain, and soak them one hour in milk enoug'h to cover them. Before broiling, drain them, and wipe dry. Put them into a wire broiler and proceed as for fresh mackerel in the foregoing 6reakfast. Or, bake them in a moderate oven, and to two mackerel allow a cupful of milk. Bake in the milk. Some think this an improvement on fried or broiled salt mackerel.
