Take half a large cupful of rice, wash it clean, put it into a saucepan with a pint of water; let boil twenty minutes, then add half a pint of milk ; let it stand with the cover half off until the milk is absorbed. Put a little milk into a pint bowl, rub it round to prevent the rice from sticking ; put the rice into the bowl to form it, turn it on to your pudding-dish. Serve it with sweet sauce, syrup, and butter, or butter and sugar.
