Directions
One onion, one ounce butter, one pound rice, one quart beef stock, tliree ounces grated cheese. Cut a medium sized onion into small pieces, and put into sauce pan on stove with one ounce of butter. Cook about fifteen minutes or until lightly colored. Wash the rice, blanch ten minutes in boiling water, then put in cold water for a minute, drain and put in sauce pan with onion and beef stock. Simmer gently for fifty minutes and add the grated cheese, dash of pepper, salt and cayenne. Stir well together boil a few minutes, and serve hot.
