Directions
Cut three cups celery into half inch pieces, cook in one pint boiling water till tender then rub through sieve. Scald two cups and one half of milk with two tablesppons onion. Cook five minutes, remove onion and add milk to celery. Melt three tablespoons butter, add one fourth cup flour, add to milk mixture, season with salt and pepper. Let come to a boil and serve.
