  • one cupful of rice in a pudding boiler un- til soft

  • nine table- spoonfuls of sugar

Directions

Boil one cupful of rice in a pudding boiler un- til soft. Add one quart of milk, a little salt, five tablespoonfuls of sugar, and butter size of an egg. Cook until it thickens ; remove from the fire and stir in the well beaten yolks of four eggs, put in pudding dish, and cover with frosting of the whites of the eggs, beaten to a stiff froth with nine table- spoonfuls of sugar. Place in the oven and brown. Serve either warm or cold, with or without sauce.
