Thirty-five marshmallows, one tablespoonful powdered gelatine, one cup cream, one tablespoonful sugar, one teaspoonful vanilla, two eggs, one tablespoonful brandy.

Cut marshmallows in three small pieces. Mix with these enough powdered sugar to prevent them sticking together. Dis- solve gelatine in boiling water. Take cream, sugar and vanilla and mix with gelatine when cold, together with beaten whites of two eggs. Into this mixture put the marshmallows and brandy. Serve with whipped cream. B. T. H.
