To a cup of cold, boiled hominy (small grained), add a tablespoon- ful of melted butter, and stir hard, moistening by degrees with a cup- ful of rich milk, beating to a soft paste. Put in a teaspoonful of sugar, and, lastly, a well-beaten &gg. Roll into oval balls and dip into beaten egg, then into cracker crumbs, and fry in hot lard. Flour your hands before rolling them.
