Ingredients
- one cup of white sugar
- two tablespoonfuls of water
- one pound of powdered sugar
- a cupful of boiling water
- one sheet of isinglass
Directions
One cup of white sugar, two tablespoonfuls of water ; put these in a dish on the stove and heat slowly until boiling hot ; beat the white of an &%% to a stiff foam and stir into the sugar ; remove from the stove and stir occasionally until nearly cool, then flavor with lemon or rose- water and spread on the cake.
ISINGLASS FROSTING. Take one sheet of isinglass, pour about half a cupful of boiling water on it and stand it in a warm place to dissolve slowly. When there is no scum on top add to it one pound of powdered sugar and a heaping teaspoonful of starch. Let the cakes be cold ; pour the frosting over, smooth it down as Uttle as possible and set it away in a cool place to get hard. This is a nice and much easier way than to make frosting of sugar and beaten eggs.
