I pound of calf's liver, i pint of water.

I tablespoonful of flour, i small onion.

Salt and pepper to taste.

Cut the liver in slices, then again into pieces about 2 inches square. Put 2 tablespoonfuls of dripping into a pan; add to it the flour and stir until brown. Now add the water; stir constantly until it boils. Pour it into a stewing pan with the liver arid onion; cover and simmer gently for I hour. Add salt and pepper, and serve.
