Directions
One teacup of sugar; 1 teaspoon (scant) of butter; 8 eggs; juice and grated rind of 1 lemon; 1 teacup of boiling water; 1 tablespoon of flour, dissolved in a little cold water. Stir the dissolved flour into the hot water, add the butter and sugar and cook until clear, taking care that it does not scorch. Remove to edge of range, add well beaten yolks of eggs and lemon and put into shells of paste already baked. Whip the whites stiff, add % teaspoons of sugar, a few drops of lemon juice spread on pie, and brown in a slow oven. Mrs. G. R. Harvey.
One lemon, peeled and grated in a bowl, then add 1 cup of sugar, 1 tablespoon of flour, stirred in sugar ; 1 beaten egg, 1 cup of water. Mix well before adding the water. Bake with top crust.

DELICIOUS LEMON PIE. Two lemons ; 2 apples ; 3 cups of- sugar ; 4 eggs. Remove seeds and grate rind and pulp of lemon; grate apples; add sugar and well beaten eggs. Bake with 2 crusts. This quantity makes 3 medium sized pies. Half the recipe can be used. Mrs. E. J. Seamon.
