Ingredients

  • 1 quart dried white soup beans
  • 2 quarts fresh water
  • 2 quarts fresh boiling water
  • a pinch of soda
  • 1 table- spoon butter
  • salt
  • pepper

Directions

Wash 1 quart dried white soup beans and soak them over night. Drain, and boil in 2 quarts fresh water. Drain again, re- turn to the kettle with 2 quarts fresh boiling water, add a pinch of soda, and boil until mushy. Rub through a sieve, add enough boiling water to make it the thickness of cream, stir in 1 table- spoon butter, salt and pepper to taste, let boil up once, and serve with croutons.
