Mix 1 tablespoon melted butter with 1 teaspoon salt and \ tea- spoon pepper; trim a small steak neatly and roll in this dress- ing ; arrange on a broiler and broil over a good fire G to 8 minutes on each side, turning to avoid scorching. Serve with any dressing liked. Or broil without the previous dressing, browning both sides, but being careful not to cook through. Put on a hot platter, and baste both sides with butter, salt and pepper, press- ing slightly to release the juices.
