SWEETBREADS.
Throw calf's sweetbreads into cold water as soon as they come; soak 1 honr; trim free from fat, put in boiling water with 1 teaspoon salt and boil 15 minutes ; remove skin and strings, and put in the icebox until used. They will keep 2 days after par- boiling. Cut with a silver knife. They may now be cooked in any way wanted.
