Directions

Chop separately 6 shallots or small onions, and 6 sharp gherkins ; mix with 1 tablespoon capers. Put in a saucepan with h cup white vinegar, some thyme, a bay leaf, and a pinch of pepper. Simmer till the vinegar is reduced to J. Add 1- cup white stock, boil a few minutes, skim, take out the thyme and bay leaf, and serve in a gravy boat.
