Put firm peeled mushrooms into boiling water, take out im- mediately, drop into ice water, drain and wipe dry. Lay them in a saucepan with a large tablespoon melted butter, set over the fire and turn. Sprinkle in an ounce of flour, white pepper, salt and a little minced thyme and parsley. Pour in a pint of stock and let simmer 20 minutes. Break hot biscuits in half, lay on a heated dish, lay the mushrooms carefully on them, strain the gravy adding to it the beaten yolks of three eggs and the juice of a lemon. Pour over the mushrooms, and serve immediately.
