Pick over and wash one cup of rice. Put in double boiler and fill with cold salted water. Boil about ^ hour, or until dry. Do not stir. It should turn out with the kernels separate and whole. If not boiled dry when done, turn into a colander and stand on a pan in the oven with the door open for 5 minutes. Then serve immediately. It makes a good dressing on a platter, with roast meat in the centre, or a roast or stewed chicken.
