- 1 teaspoon vanilla

Put 1 quart of milk on to boil in a double boiler, with \ cup sugar and a little salt. Save a little of the milk to dissolve 3 tablespoons cornstarch ; when the milk boils stir this in, and when beginning to thicken add the beaten yolks of 4 eggs. Take from the fire and add 1 teaspoon vanilla. Pour into a pudding dish, beat the whites of the eggs to a stiff froth with half a cup of sugar, saving out a little, flavor with lemon, spread over the pudding and put in the oven to brown. Moisten the top with the remnant of frosting, and sprinkle over it grated cocoanut.
