Mix 1 tablespoon lard, 1 quart flour, 1 tablespoon yeast, and water to form a stifif batter, and let stand till light. Add a very little soda, and knead up not very stiff : roll out the paste, cut in rounds with a saucer, lay a spoonful of freshly made apple sauce either green or dried on one-half the crust, fold the other over, pinch the edge, and fry in hot lard.
