Put a good-sized lump of butter into a kettle ; when melted, put in a piece of veal, about 3 pounds ; when browned on all sides, add water, and keep boiling until well done; when cold, grind fine and add a white sauce made of 1 tablespoon butter, melted, 1 tablespoon flour and milk; cook until thick; make into small croquettes; dip in rolled cracker; fry in deep lard; add salt and pepper.
