Whip 1 pint cream light and frothy. Take a generous cup of maple syrup and heat ; add to it the well-beaten yolks of 2 or 3 eggs, stirring until the eggs thicken the syrup. Take from the fire at once and place pan in disk of ice water; beat the mixture until it is light and cold; gently fold in the well- beaten cream. Pack in a bucket of ice (with plenty of coarse salt on ice) and allow it to stand for 3 or 4 hours.
