Break cheese in small pieces or, if hard, grate it. Put it with milk in double boiler. Toast bread on one side and keep hot. Mix mustard, salt, and pepper; add egg and beat well. When cheese is melted, stir in egg and butter, and cook 2 min- utes or until it thickens a little, but do not let it curdle. Serve on toast.
