Directions
Have them as nearly of a size as possible. Put them in boiling water; as soon as they are done, (which will depend upon the size,) pour oflF the water ; then lay them on the back part of the stove, where they will dry, but not burn. Some persons par- boil them, cut them in two, and broil them over a gridiioa.
Take great care in picking it ; wash it well, and put it in a steamer with a little salt. It will cook in twenty minutes. Have some toast on a dish ; put your spinach on the toast, and some poached eggs on the top.
TO BOIL GREENS. Cabbage sprouts are better boiled with a piece of pork or bacon. Eat with hard-boiled eggs, and if cooked without the meat, have drawn butter or vinegar. 6
