Dress, clean and truss a fowl ; tie in a piece of cheesecloth, otherwise scum will settle on skin and discolor it; place in kettJe half surrounded with boiling water; cover; cook slowly until ten- der, turning occasionally; add salt the last hour of cooking; serve with egg, oyster, or celery sauce.
