AVhen the chicken is nicely dressed fill it with a dressing made as follows : Take enough stale bread to fill the chicken and cut in very fine pieces; then i)ut in a spider with 2 tablespoons of butter and brown slightly ; when cool enough not to cook the egg, mix 3 eggs and enovigh milk to moisten nicely; pepper and salt to taste, and for those Avho desire it, sage is an improvement ; put in the oven and roast until tender; baste often.
