In cooking pancakes and waffles, be sure to use only enough grease to keep them from sticking to the griddle or waffle iron. Have the griddle hot ; cook the cakes until the edges are full of bub- bles; then turn. If doughey inside, the griddle is too hot; if leathery and heavy, not hot enough. A teaspoon of brown sugar will make cakes brown nicely. The addition of some soaked bread crumbs, mashed fine, or a little cold rice soaked in milk until soft, makes them very tender and delicious.
