  • 1 dozen sweet oranges

Boil together for ten minutes 1 pound sugar and i^ cup water; skim and add the juice (»f quarter of a lemon: peel 1 dozen sweet oranges ; cut them in halves crosswise : cut out the cores with a sharp knife; put a few pieces at a time in the hot syrup and lay them out singly on a flat dish; pour over them the remaining syrup and place on the ice to cool. To dish, lift the can from the ice and salt; wipe carefully ; then wipe the bottom with a towel dipped in boiling water, and turn pudding out on round dish ; heap the oranges on top and around the base of the pudding, and pour the syrup over them; serve immediately.
