Directions
1 pt. inilk. l)utter size of an egg, 1 fresh eocoanut grated fine, or an equal quantity of the dessicated eocoanut; 8 pounds granulated sugar, 2 teaspoons lemon juice (strained); boil slowly until stiff; then beat to a cream ; pour into shallow pans ; when partly cool mark off in squares. COCOANUT BAR NO. I.
4 cups sugar, 1 cup water, i/. teaspoon cream of tartar, 14 pound eocoanut ; cook sugar and water and cream tartar until it makes a soft ball when dropped in cold water; remove from fire; beat until it thickens; then add eocoanut; turn into buttered pans; cool and cut into bars. 4 cups granulated sugar, % cup milk ; boil three minutes ; stir until it begins to thicken and add 1 grated eocoanut, or an eqlial quantity of the dessicated eocoanut ; spread on buttered pans, and cut into bars.
