Thoroughly clean fish; cut in slices about an inch thick, and lay in cold water for about 2 hours. Boil all the ingredients in the water for a short time, then add the fish and boil for 15 minutes longer. Remove from liquor and arrange on a deep plat- ter. Strain the liquor and thicken with potato meal or add gela- tine to stiffen ; pour over the fish and let stand until set. This is served cold, and either plain or with vinegar and oil.
