  • 1 cup mashed fruit
  • a spoonful of whipped cream on top of each glass
  • 1 lemon
  • 2 oranges
  • 3 ggg whites

V/z cups sugar; 3 cups water.

Boil 5 minutes ; add 1 cup mashed fruit, juice of 1 lemon and 2 oranges. Beat until cold, then add 3 Ggg whites; J^ cup rum or sherry; and freeze soft. A frappe never should be stiffer than mush, and is served in glasses at afternoon teas.

For Coffee or Tea Frappe — Strong coffee or tea may be substituted instead of fruit, and are served with a spoonful of whipped cream on top of each glass.'
