Bavarian creams are a combination of fruit juices and other liquids, as milk, coffee, chocolate and cream.

14 cup cold water. y^ cup sugar.

1 cup strawberry juice 1 pint whipped cream, and pulp.

Soften gelatine in cold water for ten minutes. Dissolve by putting vessel in hot water. Strain this into strawberry and orange juice. Add sugar and stir until thoroughly dis- solved. When mixture begins to set, fold in cream.
