Boil until brittle when dropped into cold water. Remove from fire and stir in rapidly 1 pinch soda. Pour into buttered tins and when cool pull.

V2 cupful water Boil sugar and water together about 5 minutes, or till it will just hold together when dropped in cold water. Remove from fire and begin stirring. When slightly cool add the peppermint, and when it begins to look creamy, drop on buttered paper.
