Heat a quart of milk quite hot, that it may not whey when baked: let it stand till cold, then mix with it eight eggs, sweeten with loaf sugar, and flavor with essence of lemon and rose water or vanilla. Fill your cups, set them in an oven in a dripping-pan half filled with boiling water. When the water has boiled ten or fifteen minutes take out a cup, and if the cus- tard is of the consistency of jelly it is done. Cover the cups in the oven and they will bake better.
