- two quarts of boiling milk
- one quart of cream

Directions
Have on the fire in a pan one pound of maple sugar ; let it boil two or three times, sufficient to brown but not to burn it. Beat six eggs and one pound of white sugar very light; stir this into two quarts of boiling milk, and stir constantly until it comes to a boil; then pour in the boiling sugar, and mix thoroughly. When perfectly cold, add one quart of cream, sweetened with a cup of white sugar. Put in a freezer and freeze the same as ice cream.
