  • one pint of juice put one pound sugar

Strip your currants off the stem, and put them into a stone jar; set the jar into a pot of water, let the water boil around the jar until the juice is extracted from the currants, then strain the juice through a coarse muslin bag. To one pint of juice put one pound sugar; when dissolved let it boil, and skim it; when it stiffens take it off. Boil it for about twenty minutes.
