Directions
Take two or three pounds of veal (chicken may be used), place in a quart of cold water ; season with salt and pepper ; take nearly a quart of flour, make into biscuit, using baking powder ; when veal is tender drop in a large piece of butter ; put in biscuit ; cover tightly ; cook twenty minutes ; take veal and biscuit from kettle' and thicken gravj^ with flour ; pour over all and serve in a hot dish. ASPAEAGUS. Wash clean ; cut off the white part, except a mere end ; j^ut into sUghtly salted boiling water, boil five minutes, pour off water, add more boiling hot ; boil till tender; then add butter, pepper and salt; just before serving stir in a thickening made of one teaspoonful of flour mixed up with cold milk. One-half cupful of cream improves it. Or, boil in salted water till tender ; season with butter, pepper and cream ; pour over nicely toasted bread.
