Directions
One pint of hot mashed potato, one tablespoonful of melted butter, one-half saltspoonful of white pepper, a speck of cayenne pepper, one-half saltspoonful of salt, one-half saltspoonful of celery salt, a few drops of onion juice, yolk of one egg ; mix all but the egg ; beat until very light ; when slightly cool, add the yolk and mix well. Rub through a sieve ; make into balls ; roll in fine bread crumbs, then dip in beaten egg, then roll in crumbs, and fry in hot lard.
