This receipt appKes to any "greens." Cook the spinach in enough salted boiling water to cover it ; when tender, place in colander and drain, and chop fine afterwards ; then fry it a few minutes, with a little but- ter, pepper and salt ; serve with .sliced hard boiled eggs on top. Served as a course, it is arranged as follows : Put a circle of thin slices of buttered toast (one slice for each person at the table) around the dish, on each slice put a cupful of spinach, neatly smoothed in shape ; press the half of a hard boiled Qgg into each pile of spinach, leaving the cut part of the egg uppermost.
