Wash the stalks and cut into inch bits without peeling, pour boiling water over it and let it stand ten minutes, dredge lightly with flour; for a ten-inch plate allow a heaping cup of sugar, dot with one tablespoonful butter cut in bits the size of a pea, cover and bake in a very quick oven for the first ten minutes, then more slowly until done, about thirty minutes in all.
