Put four ounces of Apricot marmalade into a sauce pan with one ounce of fresh butter and one-half cupful of water ; set over fire and stir with a wooden spoon until it begins to boil, then take from the fire, add one-half cup full of Kirsch (or brandy), let boil up once and serve with apricot or apple dumplings.
