Ingredients

  • one cupful of sugar
  • two tablespoonfuls of lemon juice
  • one cupful of water
  • one large orange
  • one-half cupful of sicily madeira
  • two eggs

Directions

Boil together one cupful of sugar and one cupful of water for fifteen minutes, than pour half of it into a small pail with the juice of one large orange, two tablespoonfuls of lemon juice and one-half cupful of Sicily Madeira. Set this into a freezing mixture and stir occasionally. Let the remaining half of the syrup boil five minutes more, then beat it slowly into the beaten whites of two eggs. Beating till they begin to stiffen ; set away to cool until the frozen mixture is as stiff as can be stirred easily.

Beat in the meringno and it is ready to use, but will not hurt to stand for some time. A most delicious sauce for any frozen or ice-cold pudding.
