Make the raw custard as above, using six eggs instead of four and omitting the corn starch. Strain into a mold or cups, set into a deep pan and fill two-thirds of the way to the top of the mold with boiling water. Bake in a very moderate oven. Test often with a knife and take out the instant the knife blade comes out smooth and clean. These two receipts are the foun- dation for numberless varieties of desserts, according to the
