Rub the inside of a frying pan with a freshly cut onion, pare one large tomato and cut into small bits, put into the pan one heaping tablespoonful butter, add tomato as soon as it is melted and cook for five minutes, stirring occasionally. Beat the eggs enough to break the yolks and turn them into the hot tomato with one teaspoonful salt, one-half saltspoonful pepper; stir like poached eggs and serve on buttered toast.
