Directions

One fowl, one onion, two tablespoonfuls butter, two table- spoonfuls curry powder, two ounces sweet almonds, one-half tea- spoonful salt, one-half tablespoonful lemon juice, one-half pint water. Cook the sliced onion in the butter till soft, but do not brown. Then add the fowl cut in very small pieces ready for serving. Sprinkle over the curry powder (most people would prefer half the quantity) and stir over the fire for five minutes. Blanch the almonds and pound them with a little water. When

they are quite fine, put the remainder of the water to them and grind them well. Strain this through a strong strainer cloth pressing hard. It should come through looking like milk. Add this with salt to the fowl and simmer till tender ; put in lemon mice just before serving. This is excellent made with veal. Grated cocoa-nut may take the place of almonds. Serve with rice.
