Cut some rennets in half^ take out the cores and prick the apple-rind in several places ; sim- mer them in a glass of water^ with about half a quarter of a pound of sugar. When the apples begin to form a marmalade^ arrange them in the compotier^ reduce the syrup and pour over it.
