Cut off the ends of the stalks of some fine

Mordlo cherries and pat them in a preserving- pan^ with half a glass of water and a quarter of a pound of sugar ; set them on the fire^ and let them boil up two or three times ; then arrange the cherries in the compotier^ the stalks upper- most^ pour the syrup over them, after reducing, and serve cold.
