Take a pound of green gooseberries, spht them on one side to take out with a new tooth-

pick, silver or ivory, the seeds ; put them into warm water on the fire, and let them remain till they rise to the top. Take them off the fire, and put into them a little salt and a spoonful of vinegar; let them remain in the water till cold, by which time they will be quite green, then again put them into cold water. In the mean- time, make a strong, good syrup with half a pound of sugar and a glass of water ; let it boil, and skim very clear; then put in the goose- berries well drained, and let them simmer gently till done ; then take them out with a strainer, and put them into the compotier. Reduce the syrup, and serve.
