Directions
To four pounds of cherries put one pound of sugar, dipping each lump in water to wet it, but not more water than will wet the sugar. When melted, and it boils, put in your cherries, having first stoned them ; let them boil a few minutes, skim them clear, take them off, and let them stand in the syrup two days ; then boil the syrup, and add about half a pound of sugar to it before you boil up the syrup, and pour it boiling hot over the cherries ; let them stand four days in the syrup, and then drain them on sieves, and put them to dry in the sun, or in a cool
