Directions
Stone four ponnds of cherries, and lay them in a basin separately, sprinkling a pound of white sugar over each layer ; let them stand till the following day, then put them into a pre- serving-pan, and place them on the fire; let them boil a quarter of an hour, and then put them into a basin with their syrup; let them stand in it three days, then take them out, and place them on hair sieves to drain, and place them in the sun to dry, or before a slow fire, or in a cool oven. It must be very cool: only sufficient heat to feel when you put your hand in. When dry, pack in boxes as before.
