Take a pint of good cream, put into it half a spoonful of coffee made strong, the same of orange-flower water, with half a quarter of a pound of sifted sugar, two eggs, whites and yolks, whip well together till quite thick. Put this into a compotier, and put it into a bain maree till the cream is set ; then put it in a cool place on ice till ready to serve.
