Materials. — I ox kidney ; i carrot, I turnip, 2 onions; flour, 2 tablespoonfuls ; Yorkshire Relish, i tablespoonful; pepper and salt.

Directions. — Wash the kidney, and cut it in pieces ; fry it brown in deep fat. Slice the carrot and turnip small, boil them sharply for half an hour in 3 pints of water or stock, with a little salt, then add the kidney, and stew for two hours. Mix the flour with the Yorkshire Relish, and a little of the soup, stir this in ten minutes before serving, and boil for ten minutes, with a little pepper and salt added.
